This is normal. 2.5 year old pan that is very well seasoned. I cooked steak. It looks like this after. It is perfectly fine. I will keep cooking. I will not strip. Matfer 11 7/8 in., de Buyer 12 in., and de Buyer 9 in. #1 care tip is plate food immediately, rinse hot pan under hot water. Make sure pan is smooth to touch after - no remnants.
