One of my recent chefknives. Stainless Sanmai with a C125sc cutting layer, 2.5mm thick ground close to zero. The octagonal handle is made from ancient bog oak. Due to the brass guard the balance point is ideally located, just in front of it.

The newest knife I finished. The handle wood is Hawaiian Koa, depending on the way you hold it it changes colours, completely natural. Video of it in the comments.
