Rare vegetarian meal prep for lunches this week! Courgette and pepper frittata, with a simple side salad. Have made a dressing that I’ll take to work and add when/if I want. Yum!

Quick! Use everything that’s leftover! Carrot and coriander soup, and beef mince and veg fried rice. Super tasty and cheap as chips! Love the satisfaction of using up all my spare bits in the fridge.

Pretty pleased with the lunches I was able to rustle up using leftovers from the week! Sausage, carrot and leek ‘stew’ with garlic mashed potatoes. It’s officially winter so mash is back on the menu!
